Cooking With LSP - Poppers

 



Oh yeah, cooking with LSP, that old shibboleth. Good call, readers, but hold on. There you are, and it's a Sunday afternoon in the Texas Free State, Masses said, Sacrament confected. So what to do? Have a glass of nicely chilled Vieille Ferme, and ponder the issue. An obvious answer springs to mind, after all, it's dove season, make poppers.

It's easy enough, shoot some birds, soak the breasts in brine and while they're doing their thing slice some jalapeno's in half, scoop out the seeds and fill those bad boys with cream cheese. I use Philadelphia Cream Cheese in its famously silvery foil packet, but that's just me, feel free to use a lesser brand. No rule.



Then put the dove breasts on a cutting board, slice off the meat and place each breast in the middle of each cream cheese filled pepper. It's not hard, far from it, but word to the wise, do not rub or wipe your eyes during this evolution. Seriously, bad error.

Next up? Wrap the pepper, cream cheese, dove combos up in bacon, drive a toothpick through the midst of each one to secure the life-giving bacon or, if you can't get toothpicks because supply chain collapse and inflation, simply wrap bacon around the morsels and let it be. Likewise, if you run out of bacon because you can't afford one slice per popper because Bidenomics, cut your bacon strips in half and get the job done that way. Trust me, it still works.



Prep done, behold the beauty of the thing and fire the popper tray into the oven at 400*. Take it out after the bacon's ready, you can smell the deliciousness of it when it is, and fall upon your scoff.

Poppers!


There was a feast of dove poppers last night and that was followed by steak. I count that as a success, unlike Justsin Welby's fish rig, which clearly isn't.

Get That Franchi Instinct

GWB tipped up at the compound yesterday and before you could say "Archbishop Justin Welby's an Oil Shark!", there was an over and under on the mahogany. My philisophical friend had cleverly gone out and bought a Franchi Instinct L 20 gauge, and who can blame him?

We took it out for a test drive today, rambling about in search of rabbits, who sensibly stayed under cover, and then slinging a box or so of skeet, country style. Just a lot of explosive fun and good practice.

I shot reasonably well, once I remembered to aim... and GWB was knocking the clays out of the air like a good 'un. But how did the Franchi perform? I took a couple of breaks from my cheap, but hey it works, Mossberg 835 Ulti Mag pump to find out.

I enjoyed shooting this gun; it's light, at 6.5 Ilbs, and comes quickly to the shoulder and to target.  I thought it looked good too, with traditional styling, case hardened finish on the receiver and no gaps between metal and wood. That said, the wood of the buttstock sits proud to the receiver by a millimeter or so, but I felt this was balanced out by well-defined, deeply cut checkering and A grade walnut furniture. Not a bad looking gun, but did it work?

For sure, the Instinct functioned flawlessly over several hours of pretty much continuous shooting, with no misfires, failure to eject or mechanical problems. So that's alright then, but would I buy one? If I was looking for an over and under shotgun that costs $1149, yes, I think I would. 

The gun looks good, handles well and if you don't get carried away and forget to aim, it's perfectly capable of knocking the opposition out of the sky. Granted, it's not a $2000 plus firearm, but whoever said it was?

Eat Dove

After a decent Sunday shoot with my philisophical friend GWB, it was time to put the dove on the grill. First you remove the small breasts from the bone and soak them in brine.

Next you chop some Jalapeno peppers in half, scoop out the insides and fill them with cream cheese. Place the dove meat on the peppers and wrap them in bacon; skewer with a toothpick and place the poppers on the grill for 20 minutes of indirect heat.

Tasty as you like.

It's good to eat what you shoot, provided it's edible.
