Hogs will be too quick and he'll bleed out and die quickly. Pecked to death by chickens, on the other hand, that's a long slow suffering death, especially if you put a fencing mask (the sport type mask) on him so they don't get his eyes, tongue or his neck veins and arteries.

The Catherine's Wheel. You take a wagon wheel and mount it to a pole (pole not stood up yet. Yet.) and grease the hub really well, maybe use modern bearings for the fun of it. You carefully break the offender's arms and legs and weave them around the spokes and loosely tie the body down. Then raise the pole almost but not quite vertical.
Why almost vertical? Because as the wind blows over the wagon wheel and the sufferer, the wheel will rock back and forth, back and forth, back and forth, grinding all those broken pieces of bones across each other.
Back in the day, there were actually some survivors of said treatment. They had future careers as 'freaks' in the medieval version of side-shows.
