Here at the Compound we're keeping it simple with roast duck, partly because there weren't any turkeys and the Specialist thought duck would be tasty. But that's for later. In the meanwhile, here's a prayer.
O MOST merciful Father, who hast blessed the labours of the husbandman in the returns of the fruits of the earth; We give thee humble and hearty thanks for this thy bounty; beseeching thee to continue thy loving-kindness to us, that our land may still yield her increase, to thy glory and our comfort; through Jesus Christ our Lord. Amen.

Not only have I never cooked a duck, I'm not sure I've ever eaten it either. My mom said my grandma used to do a duck for Christmas and kept the duck fat for spreading on toast.
We're not all that fond of turkey and so we "sacrificed" by having baby back ribs (that were purchased on sale at least a month ago, vacuum sealed, and popped in the freezer. That rack has a buddy or two in the freezer for Christmas.)
Adrienne, I need to practice duck, but feel it's worth it.
