El Conquistador



One of the things people like to do in this town is eat Tex Mex at El Con. El Con is short for El Conquistador and that's where you'll find everyone on any given Friday evening.




I don't know why but no one accuses El Con of cultural appropriation and nobody seems to notice the restaurant's brazen stand for Spanish imperial conquest.




It's strange, but there's no movement here to replace the place's unashamedly colonial brand with something more "woke," like Los Incas, Azteca or El Jolly Old Skull Wall. That's just not happening and the name remains along with a militarist suit of armor, horse totems and a couple of clay bull idols.

After a hearty meal in honor of Cortez, we were well satisfied. Pizarro and the gang sure know how to cook up a plate of Tres Enchiladas; cheese, it being Friday. Good work, conquistadors!




It was raining outside as we left and that too was good. At last the humid sauna of Rainforest Texas was broken by water falling from the sky as lightning flashed noiselessly overhead.

We have a couple of decent places here as well. Nothing like fajitas washed down by a cold bottle of Modelo Negra.

I could use a big ol plate of enchiladas about now. Maybe I should just make some. And.........50% chance of rain tonight. Please God...

I can see the tents for our ground breaking Mass and ceremony from my front deck. And, more importantly - porta potties!

Montes is still very much on, LL, but it's more of a breakfast place -- and the food's Mex as opposed to Tex. I prefer Montes, to be honest but El Con's a different experience again, and it has armor.

It's odd, Adrienne, but I've never made them. I know it's not hard... hmmmm, maybe another installment of the popular series "Cooking With LSP" is in order.

Yeah, but... You are culturally appropriating by EATING their food... Sigh... :-)

Enchiladas are super easy. With an Instant Pot to make pot roast it's now super easy to use shredded beef instead of ground beef. Chicken is good and easy too.

See what you started. Grabbed a small chuck roast to make shredded beef for enchiladas later this week.
